Simple, healthy, tasty. Those are my three favorite cooking words. Also quick, colorful and easy (to make). Last week I put this dinner together in literally 30 minutes. Delicious and memorable. Maybe even company-worthy. This recipe is made for two. Double, triple or quadruple for a larger crowd.
Ingredients:
10 large scallops
5 slices bacon
1/2 – 1 pound fresh asparagus
kosher salt & fresh ground pepper to taste
Instructions:
- Preheat oven to 450
- Cut bacon in half, cross-wise, so you have 10 pieces
- Wrap bacon around scallop, place ends side down on sheet pan lined with parchment paper. Place bacon-wrapped scallops on right side
- Rinse asparagus, pat dry. Place on left side of sheet pan. Drizzle olive oil, and sprinkle kosher salt and pepper on asparagus.
- Bake for 20-25 minutes, or until bacon is crispy. Serve immediately! Bon Appetit! Enjoy!
